It would be really great if everyone here could just post one or a few pictures showing the current state of their house.

I'll start right away.

In our building, utility lines run through drywall partitions. These walls then serve as something like “exterior walls” for built-in cupboards or similar spaces (I hope that makes sense). So, no recesses or boxed-in sections were made in the actual exterior walls.

I wouldn’t have any concerns about installing that partition wall as a service wall—just as I would do in the bathrooms: the drywall panels would line up perfectly, meaning they would only need to be full height. There would then be a single ceiling opening beneath the sink. But judging by your architect, I’m sure this has already been planned accordingly.
