I'll start right away.

For renovations, it’s best to provide a comparison of before and after the remodeling.

May I ask what kind of niche this is? And will it be closed off in some way?

It looks to me like there is a chimney there, or at least I can see the access flaps for the chimney sweep.

Correct, that’s where the chimney is located. We still need to figure out exactly how to cover it, as the chimney sweep logically needs access. The drywall installer should give this some thought.

Place a cabinet in front of it, but move the cabinet aside before the chimney sweep arrives.

Exactly, that's how we do it too (with the maintenance hatch in the hallway where the underfloor heating branches off – there it's a flush-mounted, baked-on enamel metal hatch, but something like that could also be installed here).
