I'll start right away.

We also paid around 100€/m2 (approximately $108/m2) for the paving. That covers everything: base layer, curbstones, labor, drainage channel, manhole frame, and so on. And we didn’t use particularly expensive stones. It seems to be a common price.

How long was the landscaping contractor working for 200m² (2,153 sq ft)?

We had about 150m (490 ft) of granite curbs, 80m² (860 sq ft) driveway + 25m² (270 sq ft) paths (pavers), 35m² (375 sq ft) terrace (concrete paving slabs) = €23,000.
I can’t easily break this down afterwards, but I wanted about €50 per m² (approximately $5 per sq ft) for stone material/delivery/install (only for the aggregate), the rest (frost protection layers, etc.) gets included in the overall price. So it probably ended up around €70-80 per m² (approximately $6.50–7.50 per sq ft).

Paving stones and terrace slabs were purchased from the building materials supplier for 6,000 euros, mineral concrete, paving gravel, curbs, screed sand, cement, 100m of natural stones measuring 40x20x20cm (16x8x8 inches), and road cement for about 4,000 euros so far. I expect about 1,000 euros more for materials and one weekend with a mini excavator.

Labor costs were planned at 10,000 euros, but it looks like this won’t be possible without our help. So, we laid the stones ourselves yesterday, and I will also do the cutting myself. Although we have the budget, I don’t agree with spending my money on an hourly basis.

Yesterday, I spoke with my neighbor, who received a quote from a landscaping contractor (three years ago) for labor costs only: 8,000 euros gross for 90 square meters. He guessed that a cheaper offer of around 6,000 euros might have been possible.

That's exactly what I mean. I wasn’t aware that a driveway, paths, and terrace of this size would be so expensive without electric heating, which is why I’m now opting for 80% electric heating.
