Not bad, good eye... There is indeed a spot that still needs some rework. It’s not uneven, but a wave in the plaster. That makes it appear uneven.
I’m not familiar with ridge tiles for such a plaster connection—how would they ensure watertightness? You can’t avoid flashing there. I would have also preferred if it were a bit lower, but according to my expert, this is done according to best practice. If it were made smaller, they wouldn’t provide a guarantee for watertightness anymore.
