With us, the roof framing was done first, and then the gable was fully built.

This was done this way everywhere here.

The first floor was built with masonry, then the ceiling was installed, followed by the roof, and finally the attic was fully constructed.

It depends whether you have a rafter roof or a purlin roof, and whether there is an eave or not. This cannot be generalized.
