Quick question for those with finished interior plaster: How do you ventilate? Morning and evening? And in between, do you keep the windows slightly open or closed?

No, always on tilt, and open the casement windows fully as often as possible. The more air circulation in the house, the better.
And if corners dry poorly, lightly sand them. That will speed up the process.
