I assume the dishwasher should be installed easily, without any tricks.
The two models will not fit then. The dishwasher (from BSH) must be 86.5 cm (34 inches) tall and have a Vario hinge.

I would also like to find a workaround with the dishwasher, but I have no idea what kind of tricks would be needed. Cutting or something like that would be fine if I could understand how to roughly approach it. And which of the machines would be more suitable for this kind of modification?

Since I will probably have the kitchen installed by IKEA, could this be arranged with their team, or do they not do such modifications?
At Siemens, they said I would have to buy the original Siemens hinges and have the IKEA panel trimmed to fit. But considering the cost of the hinges, I would be financially better off with the alternative machine you mentioned.

If I were to buy a freestanding unit, would it generally be easier? That is, it would only have to be adjusted in height using a plinth or a top cover? (Even if that option is not quite as neat.)

You don’t know who will install the kitchen. Delivery and installation are carried out by subcontractors. It may happen that a few trainees come to your house, two of whom speak barely any German and one who speaks almost no German. This can make any work beyond the standard challenging. You might also be told that installation of non-IKEA dishwashers is not included in the price. I would clarify this beforehand and try to get written confirmation before placing an order.

The folding hinge from Siemens is very expensive, and cutting a front panel to the exact measurements is problematic if the front is not flat. If this is even done during installation, don’t expect the cut edges to be properly sealed. If the modified fronts, for example, start to swell, IKEA might refuse the warranty, even if the issue is caused by improper installation. I would also clarify this in advance if necessary.

A large-capacity dishwasher from BSH without a vario hinge can be installed if there is about 3 cm (1.2 inches) of free space between the top edge of the dishwasher and the countertop, or if the gap is filled with wood. The front is then mounted so that it aligns with the bottom of the adjacent cabinets and overhangs the door at the top (Stefan method).

If your budget is tight, I would continue washing by hand until you have saved enough to buy the appropriate dishwasher. The less expensive models are also better quality. For example, the SX63D002EU has a plastic bottom inside, whereas the SX76P030EU has a stainless steel one.

This one would work without any tricks:
Siemens SX63D002EU
It is an extra-large appliance with a variable hinge, allowing fronts up to 800mm (31.5 inches).
Its price is still reasonable as well.

The SX63D002EU does NOT have an adjustable hinge.
