Maybe it’s a shell house???
For that amount (400,000 euros), I can currently get only about 140 sqm (1,507 sq ft) with a basement in and around Nuremberg. Just to give you a reference.
I don’t know who sold you this idea, but if you don’t have an unlimited buffer, you’re basically throwing your life away (either financially or through your own labor), and I’m not just saying this—I guarantee it!

Sorry kbt09, I don’t understand "Sauna, no need since you can cool down outside in winter sometimes?" Based on the keywords: after using the sauna, I would like to use the balcony to cool down, for example (there are no houses next to us on the south and west sides). Sorry, I will not provide a site plan. The discussion should focus solely on the floor plan. The bedroom is only a walk-through room for the parents. We actually like that there is a separation.

Well, if we don’t know what your plot looks like, it’s hard to give alternative suggestions. The site plan doesn’t have to be from Google; it can be a sketch with measurements and indications of what is on the right and left side, for privacy reasons.
The walking paths in the kitchen, for example, are not very ergonomic. The route from the kitchen to the barbecue terrace zigzags around the seating furniture. The east side lets in little light into the large room on the ground floor.
The balcony is quite far from the sauna area, and you have to go through the dressing room and bedroom first.

Most likely the kids' bathroom will end up being used all the time. I bet on that!
The price seems unrealistic, unless the construction company is connected to someone you know who can somehow offer a lower price—in that case, you’re lucky. Otherwise, others pay around 500,000 Euros. The upper floor layout is not well thought out; the partner who sleeps in longer or wants to will be disturbed because the other has to go to the bathroom or dressing room and then back again. Maybe you currently get up or go to bed at the same time, but that can change over time (for example, when you have children). I would make the master area accessible from the hallway through the dressing room, so the partner can use the dressing room or bathroom as often as they want without disturbing anyone in the bedroom. It might also happen that the children want to use the sauna later on.
In the kitchen, I would prefer to plan a freestanding kitchen island. Otherwise, with your large kitchen, a huge empty space will form in the middle and you will have to walk a long way, which is very impractical. Also, a kitchen island looks more modern (if that is desired).
Your window dimensions seem very odd to me; are the half-height windows only going to be 1.135 meters (3 feet 8.9 inches) high? You probably have high ceilings planned, and with a room of that size, the windows definitely need to be taller; otherwise, it won’t look good, and the windows should reflect the ceiling height.
