Hello,
It is very important to me that the IKEA Pax wardrobe fits into the walk-in closet. According to our planning, the Pax is 2.72 m wide (9 ft). Should I make the distance between the walls exactly 2.72 m (9 ft) wide, or do you usually allow some clearance? If yes, how much?
Does anyone have experience with this?

For plaster, it is generally recommended to add 2cm (1 inch) to each wall. Then, for baseboards (cabinets are usually recessed at the back but not on the sides), add another 1–2cm (0.5–1 inch). Tolerances in masonry are usually larger than in carpentry. So, allow an additional 4cm (1.5 inches) for masonry, maybe 2cm (1 inch) for carpentry. This applies per wall, so a total of 8–20cm (3–8 inches) would be reasonable, depending on the circumstances.
But the best approach is to order after the plastering is done; the baseboard can then be added to the measurements.

Looking forward to answers and ideas. Don’t take this the wrong way, but it will never fit perfectly at the corner like that.
If you arrange the dressing room as shown on the floor plan, it will fit. The corner arrangement requires both walls to be built, plastered, and wallpapered with millimeter precision. I can predict that due to tolerances, this won’t work.
If you want something that nice, consider having a built-in wardrobe installed there. It will be made to fit exactly to the millimeter. But it will also cost more than the Pax.
