We would be interested in your opinions on our planning.

Plot size: 750 m2 (approximately 8,072 sq ft)
Slope: No
Site coverage ratio: 0.25
Floor area ratio
Number of parking spaces: 2
Number of floors: 1.5 full stories
Roof type: Gable roof
Style: Swedish-style house with solid masonry back wall
Orientation: Garden facing west
Owners’ Requirements
Style, roof shape, building type
Basement, floors: without basement
Number of occupants, age: 2 adults, 1 child (9 months), another planned
Room requirements on ground floor and upper floor
Office: family use and/or home office
Occasional overnight guests per year: parents-in-law and brother-in-law live a bit further away
Conservative construction method
Open kitchen, kitchen island
Number of dining seats: 6
Fireplace
Garage, carport

According to the Federal Statistical Office, the average price in 2019 was 1834 euros per square meter (approximately 170.5 USD per square foot) in SH.
Your construction method is not average.
From 2019 until now, there have been and still are tremendous price increases.
Additional construction costs are not included in the 1800 euros.

Draw all existing or desired furniture into the floor plan once, to scale. Especially in the master bedroom.
I don’t like the stair landing next to the front door. Always tracking dirt into the house while wearing socks. Apart from what YPG mentioned, there isn’t much to criticize. The rest will become clear once you add your personal furniture.

I also find the cost estimate at least optimistic. If you contract the work separately, you can probably get some good deals, but then you won’t get the highest quality tradespeople. In addition, the choice of materials and fittings will be at best in the discount range. This increases the risk of the four Fs: faults, miscalculations, frustration, and disputes.

You probably wouldn’t even notice if you cut about 80 cm (31 inches) off the top of the plan: the bathroom is already a narrow layout because of the staircase, and the office would still work fine. The same applies downstairs (do you really need two offices?), although the utility room would become a bit tight, but some space could be taken back from the guest bathroom.
That would save you around 15 m² (160 sq ft), allowing you to make your price at least _somewhat_ more realistic.

The entrance has a lobby/hallway vibe (door/stairs/coat storage) and doesn’t match a 185 m² (1991 sq ft) house. Still, the circulation area is about 30 m² (323 sq ft) for me (I can’t quite read the number on the ground floor, guessing 18 or is it 13?), and upstairs it’s 12 m² (129 sq ft). That’s too much. Around 25 m² (269 sq ft) would be acceptable at most.
The bathroom is 17 m² (183 sq ft), which is too big, but also too small for its function. A toilet/bathtub shouldn’t be there. You don’t place a bathtub directly by the door.
The kitchen has already been mentioned; it’s impractical because of the long distances. Allocate more space to the dining area.
Furnish all the rooms to get a better sense...
...and immediately increase your contingency budget.
Additional note: Storage space is also lacking.
