Hello..
Question 1.. I need to cover the back of the kitchen island as well. If I use the side panels, I am short by 1.4 cm (total width 180cm (71 inches) plus side panel from the side 1.4 cm (0.5 inches)). The friendly Ikea specialist recommended that I take two side panels, 192 cm (75.6 inches) long, and have them cut to my measurements. That sounds fine, but how can I cut the high-gloss panels without the edges fraying? And what is the best way to attach them to the cabinet? The cardboard walls probably won’t hold them.

Regards to all 😱

With simple metal brackets.
I would probably mount doors on the back and, if there are no drawers inside the cabinet, use hinges so that the cabinet can be accessed from both sides.
