We planned our kitchen almost identically, but in our case the stove is freestanding (where you have the breakfast bar). Along the wall next to the pantry, we have cabinets that reach nearly to the ceiling (large refrigerator, built-in oven + microwave, tambour door cabinet in the corner, etc.). Therefore, we completely avoided tall cabinets.

Why shouldn't the sink be placed under the window?

In a recess with windows on two sides, your options are quite limited. I would completely avoid upper cabinets there (in my opinion, they look really awkward).

No, we want the sink under a window. As I said, we don’t want the stove to be freestanding.

Why no wall cabinets? Just because of the kitchen layout or in general?
We also need a lot of storage space.

Wall cabinets... it depends on the kitchen style; modern kitchens can do without them, maybe just one or two shelves above the countertop.
In a country house style, especially the (also modern) country style, you often have cornices at the top where accent lighting can be installed.
Your kitchen is not easy to furnish. The space is interrupted by two windows.
Tall cabinets or higher units become a focal point when you look at them.
If you place them next to the pantry, only the tall side will be visible as a focal point, and you will also run into it when entering the kitchen. Did you perhaps forget to include a kitchen layout in the floor plan?
Ikea has a kitchen planner you could try... cabinets are generally the same and can be visualized in 3D as well.
Otherwise, your only option is to visit a skilled kitchen showroom (or several); some are good, others not so much.
Alternatively, consider rethinking the pantry, which in my opinion is too large... you could store the contents of two kitchens in there.

As I mentioned earlier, two walls are interrupted by windows. Imagine how the wall cabinets would look—almost like shooting slits!
You have a pantry, so why do you need to store so much in the kitchen? You could even skip the pantry and build a really spacious kitchen instead—I personally think that’s nicer than having another "junk room"...
