For a durable wooden decking made from local materials, you can find the company "Dauerholz" online.
The wood is said to be impregnated with stearin (?) – which makes it last longer.
There are some negative reviews in other forums, but that doesn’t necessarily mean the material is no good. I would appreciate any methods to extend the lifespan of local woods.

Does anyone know this … or an alternative? (I am concerned about environmental sustainability)

Just buy a roll of bitumen membrane, it costs around 10, cut the patches to size and place them between the steel and wood. Screw through it. Done.

Yes, using cardboard is often recommended (it can’t be entirely wrong), but it doesn’t really make sense to me because the water between wood and cardboard probably doesn’t evaporate any faster than between wood and galvanized steel. ...

Roofing felt and wood bond together when sufficient pressure is applied. Are you familiar with gasket materials used in engines? For example, in a water pump? They seal effectively even without tar, as that is waxed paper.

I think thick stainless steel washers would look best. Maybe I can glue them in place over the pre-drilled holes before laying the wood...?

A batten frame is installed on the steel structure, with the wood laid on top (the battens can be placed on rubber pads. Of course, the battens need to be screwed together to prevent shifting). Additional spacers are placed under the decking boards to keep the boards from sitting in moisture. You can look this up online.
All other options are unprofessional. Cardboard is a complete waste; you'll just watch it rot.

Ah... so this will be some kind of seal where no water can get through at all? ... that is something different ...

Yes, it seals. Buy bitumen felt in rolls.
