What do you particularly like? It is already quite close to our ideas but could be improved
What don’t you like? Staircase, layout of the upstairs bathroom
Preferred heating technology: undecided yet between air-to-water heat pump or gas (but gas needs a storage tank for the energy saving regulations, right?); geothermal energy not allowed
Please provide suggestions for improvements or optimization. I would especially like your opinions regarding the staircase. We would probably move the roof window from above the dressing room to above the stairs, any thoughts?

I find the floor plan quite nice. In the hallway on the ground floor, I might consider creating a recess into the utility room to make space for a coat rack. The windows at the front on the ground floor seem too narrow, so the guest bathroom probably won’t get much natural light. Is the kitchen window only 1.13m (3 ft 8 in) high?

I think it looks pretty good!
However, a cloakroom is definitely missing! If you don't plan a built-in wardrobe at the entrance, jackets and shoes will end up piling up under the stairs – which is not a pleasant sight from the kitchen and dining area.
Also, I assume the main terrace door will be in the kitchen (always close to the fridge). Because of that, there is some extra space in the living room that the office lacks. I would consider moving the wall a bit there.

While many prefer fixed windows or ones with a window sill, I like an open view of the garden and the opportunity to step outside everywhere.
In this respect, I would design this window in the living room as a patio door – eventually, you’ll regret not having direct access to the garden from this side.

We haven’t chosen a model yet.I recommend the model “None.” That “occasionally” happens less often than you think. Then you turn the heating in the living room up by three degrees and watch the fire in HD TV. Your mind says “fake,” but your feelings “remember” sitting in front of the fireplace afterward. Psychology or whatever it’s called.
