The trick with Metod and an open countertop is not to leave the base cabinets freestanding as much as possible, but to use a smart system of wall mounts and cross braces – otherwise, you’ll probably see the first sagging quite soon. And the reason the countertop doesn’t bend isn’t just the material, but the clever way the base cabinets are connected.
I also believe you shouldn’t blindly trust IKEA materials for such constructions. If you really want stability, you often need to reinforce or make custom strengthening modifications – otherwise, the whole thing quickly becomes a cheap flat-pack furniture experiment.
