I would like to buy the VIKT LED wall light, but there are only electrical cables on the walls for connecting a standard lamp (no socket). Is it possible to open the VIKT and connect it like a regular lamp? At IKEA, no one could (or wanted to) provide me with any information on this 🙁

Yes, that is possible.
You will have to open it anyway for mounting on the wall. There, you can clearly see how the power cable with the plug is connected (terminal block). Loosen the cable with the plug using 2 screws and connect the power cable coming from the wall there.
The installation manual for the lamp is available at the following link. Take a look, and you will see that everything is quite self-explanatory.
