ᐅ Bathroom Installation in a Renovation – Which Finish Plaster to Use in the Bathroom (on Gypsum Board)

We are currently installing a bathroom in an older building. The walls were constructed with moisture-resistant drywall panels and properly skim-coated.
Since the house has quite thick exterior walls, the window lintels are shaped in an arch (which I think looks quite attractive). Initially, I planned to tile the walls up to the ceiling, but I wasn’t sure how to handle the arched window lintel in that case.
Now, the plan is no longer to tile the entire wall height (except in the shower). My question is what needs to be considered if the drywall panels are not fully sealed with tiles (including waterproofing slurry, primer, etc. underneath) and instead a fine plaster or similar finish is applied...? Is it okay to simply apply a standard fine plaster on these surfaces?
