The photo is one week old, and in the meantime, the flooring installer has fitted a finishing strip.
I scheduled another appointment today with the stair builder, who will take another look and propose a solution.

If the plaster edge finishes flush with the wood cleanly, I would just leave it like that, yes. Why introduce a third material?I’m not a professional. But to my untrained eye, it currently doesn’t look like the plaster finishes cleanly, nor does the joint edge of the parquet. I have no idea how precisely this can be done. However, there is usually some movement between plaster and wood that is not rigid and permanent. Wood expands and contracts noticeably. That’s why finishing strips are installed.

...unnecessary extension due to lack of characters.
P.S.: please take a photo showing the baseboard.
