Now that the plumber has finished the wall between the bathroom and the kitchen, I’m a bit concerned.

Although it’s not a load-bearing wall in terms of the building’s structural integrity, the kitchen side is supposed to have wall cabinets mounted, and the bathroom side will have the sink. The plumber left holes big enough to pass both hands beside the drain pipe, and the grooves he cut are so deep that I’m really worried about the 12cm (5 inches) thick wall.

I would need to fill in about 5–6cm (2–2½ inches) of cement plaster to restore a flat surface that I can then tile up to ceiling height on that side.

Will the cement plaster and tiles alone restore enough reliable stability to support the load?

Even the bricklayer, who was there for a different job, just said, “Good heavens, what kind of maniac did this?!”

Pictures will definitely help.
For larger holes, I don’t fill them only with cement render but with both cement render and brick pieces. This way, you don’t need as much render.
It also has the advantage that a bigger hole, which you want to fill with cement render, is less likely to shrink or crack and hardens faster.

At first glance, this sounds a bit like poor workmanship left behind by your installer.
However, sometimes it also depends on the type of bricks used or incorporated in the wall.
But honestly, I can’t fully follow your description.
