I would like to know at what height I should set the foundations in the working area (right next to the house) for the carport? Top edge of the basement ceiling / bottom edge? I assume the height of the paving stones and so on still needs to be deducted here! Correct. But what measurement is usually used in this case??

With my neighbors, yes, although the gravel layer above the pad foundations was significantly thinner than under the rest of the paving stones. When they wanted to build their carport, they planned to remove the paving stones (above the foundations) and set the structure directly on the foundation. In other words, the post of the carport extends down (deeper than the paving stones). It’s a matter of personal preference whether you find that more visually appealing...

Gravel layer about 4 cm (1.5 inches), paving about 8 cm (3 inches), settlement approximately -1 cm (0.4 inches).
I think it makes sense to place the carport directly on the foundations.
If you want to hide the foundations, set them about 10-11 cm (4-4.3 inches) below ground level – but then you will need appropriate ground sleeves when assembling your carport. Otherwise, set the foundations at the final level and pave right up to them. This can also look quite nice. It’s really a matter of personal preference – do you want to see the "ugly" foundations later or not.
