ᐅ Poorly executed plastering work in new construction – any experiences?

Hello everyone!
In my opinion, the plastering on our stairwell, as well as on some of our interior and exterior walls, is very poorly done (see pictures).
However, our construction company denies this.
Could you please give your assessment based on the pictures?
How would you handle this situation with the construction company?

Yes, it is partly quite wavy. The mirror in the bathroom is about one centimeter (0.4 inches) off the wall because of the unevenness.

They are masonry walls. The plasterers are blaming the masons.

Raking light is also not allowed for defect assessment. At least two photos are taken in raking light.

How should I look at the wall so that it is not considered raking light?
I always see the waves, even at night when the light comes from above.

Light from above is also directional light. It must either be completely diffused or come from the front.
A difference of more than one centimeter (0.4 inches) would already be significant. There is probably a standard for this, but unfortunately I don’t know which one.

So these were my first plastering attempts, some looked like this (and some were even worse^^). Were those professionals, and if so, what had you agreed upon? Were the walls already very uneven beforehand?
I wouldn’t be satisfied with this either. Not if it was done by a professional and especially if it’s in a living area.
