The underfloor heating in the children's room does not turn on when we switch it on. However, it has turned on by itself two or three times. We have no idea why.
In the bedroom, the heating is usually running at full power and only very rarely turns off – here, too, we don’t know why.
Do you have any idea what might be causing this? The rooms do not seem to be mixed up. We have a Vaillant gas boiler. Could the issue be related more to the plumbing side, or could it be something with the electrical system connected to the heating manifold?

Our kitchen, dining, and living area has six heating circuits. Like you mentioned, the living area is supposed to be a bit warmer than the kitchen for the reasons you gave. Therefore, at the current temperatures, the floor in the living room is about 26°C (79°F) warm, while in the kitchen it is around 25°C (77°F). Fortunately, nothing gets cold or alternates between warm and cold. In my opinion, this is how it should be.
When the thermostat detects that the room is warm enough, the underfloor heating simply turns down. In our kitchen, it often gets warmer than the set temperature (south-facing side, baking, etc.), so the floor stays cold. However, I wouldn’t know how to prevent this since the room temperature itself is fine.
