ᐅ Tearing Down a Garage and Replacing It – Costs?

Hello everyone,
I’m Peter, 39 years old, and just now came across this forum.
Why? Because I was looking for some information about building.
I’m not sure how things work here, but I hope I won’t get immediately criticized for asking before spending days searching through the wrong threads. I’m a bit in a hurry.

I plan to tear down my existing garage and replace it with a new one.
Unfortunately, I have no idea how to estimate the costs.
The garage should measure 12 m by 6.5 m (39 ft by 21 ft).
What is the usual interior height for something like that if I want to add a hobby room on top? (external structure)
The hobby room should have a knee wall of at least 145 cm (57 inches) and a roof pitch of 25 degrees.

I have read somewhere that costs range from 140 to 200 euros per cubic meter.
Can you save money if you don’t do a concrete slab and only pave the garage floor, or if you don’t use a prefabricated ceiling but install steel beams instead?
I know this is a lot to ask at once, but I have a bank appointment and my builder stood me up. It’s a bit awkward to show up and say I have no idea what to expect cost-wise.
The demolition is not the main issue here (a friend will take care of that with his excavator at good rates).
