I want to install standard gray rectangular pavers. Is it worthwhile to treat the pavers with a hydrophobic coating immediately after installation?
The goal is for the stones to resist dirt buildup and be easier to clean.

That is simply nonsense! Leave the stones as they are! After a few years, they will become dirty or unattractive. There is an attachment for the yellow pressure washer that cleans them.
Applying a water-repellent coating to a horizontal surface can also have the disadvantage in winter that water on the surface freezes. This is especially true if there is a strong beading effect.
I am also planning to apply a water-repellent treatment to a vertical surface to reduce freeze-thaw damage. A water-repellent wall also has the advantage of significantly less algae and similar growth.
