2) If I have calculated this correctly without coffee, the cut would be too close to the cooktop. On one hand, there might be a risk of breaking due to the thin strip, but mainly having a joint/cut edge so close to cooktops/sinks is not ideal because of liquids.

I have now chosen a different cooktop with a height of 51mm (2 inches), which gives me an 8mm (0.3 inches) ventilation gap. Now the real fun can finally begin.

With a 60cm (24 inches) deep countertop, even slight unevenness in the wall can cause the cabinets to be set further forward, making the space too tight.

Perhaps other finishes can be ordered at Hornbach. You can probably find out by phone.
If not, the manufacturer might be able to tell you who else sells countertops in that size.

The whole thing turned out a bit differently than we originally imagined, but we are quite satisfied with this solution.
