We have a bathroom in our 1969 building with uninsulated exterior walls that measures only about 3 x 2 meters (10 x 7 feet). It contains a toilet, a sink, and also a shower. After showering, we usually air the room by tilting the window open. However, this is not very comfortable in winter.
I am a bit concerned about mold forming under the suspended drywall ceiling and wonder if there is another way to ventilate the bathroom, for example with a fan that exhausts air outside when humidity levels rise significantly. However, I do not want to make a hole in the exterior wall.
Does anyone have any ideas or advice?

It is definitely more effective to fully open the window rather than just tilt it. When tilted, the walls around the window cool down, causing condensation and eventually mold in those areas. During short ventilation (15-20 minutes), the air is fully exchanged, but the walls, ceilings, and floors still retain their heat and quickly warm up the cold air again.
How do you plan to install a ventilation system without breaching the building envelope? Is this your own property, or are you renting?
If it is your own property, I would recommend looking into "decentralized ventilation."

This is a condominium, and I was thinking about ventilation at the window frame or something similar.
