Our architect is currently designing the entire upper floor using drywall construction. At first, I thought about roof slope connections, but if I remember correctly, your upper floor doesn’t have any sloped ceilings. However, many walls there are not aligned with the walls of the ground floor—so maybe there are structural reasons?

I see the advantage of drywall construction possibly in cost savings through own labor. The planner might have thought along similar lines, because...

How much more expensive is a solid wall? ... you shouldn’t only consider the material costs: building interior walls properly with masonry, especially using the frequently applied smaller brick formats, is a more complex task. It requires time from experienced workers. Drywall partitions, as you already noticed with your idea of “own labor,” are much better suited for use by semi-skilled helpers. The cost of bricks is a secondary issue here, although sand-lime bricks (which avoid the need to tie interior walls into exterior walls) tend to be quite expensive compared to alternatives. Others have already elaborated more details.
By the way, “masonry” doesn’t necessarily mean 17.5cm (7 inches) thick walls everywhere; non-load-bearing walls with a thickness of one brick, about 11.5cm (4.5 inches), are also common.
