Has anyone here built a house in Schleswig-Holstein and can recommend a developer? Or would it be more convenient/more effective to work directly with an architect?
The plan is for a two-story house with 130 sqm (1,400 sq ft), with a budget of 200,000 euros plus 50,000 euros for additional construction costs. The plot is already owned.
We would appreciate any advice.

You probably mean a general contractor. A property developer is not suitable if you already own the land. I would start by working with the aunt who inherited the property; otherwise, I don’t see how the budget and the house plan will come together.

An inherited aunt is a wealthy and well-meaning aunt, whose concerns about the nephew Delta between budget and desired house size could be significant (and without whom I do not see the calculation working out here).

Don't worry too much, you can get something for 250, but more likely a one-and-a-half-story house. Where in Schleswig-Holstein is the build planned?
