This is a very unusual ceiling construction for the German region. It is more similar to the Austrian "Dippeltram ceiling." You cannot plaster the underside of the beams directly. First, you need to install a plaster base that also compensates for unevenness, for example, wood wool panels (Heraklith), reed mats, ribbed expanded metal, or tiled wire mesh (brand "Stauss"). Using just a reinforcing mesh alone will not be sufficient.
If the ceiling vibrates, meaning it is either undersized or has too much load, you should expect cracks in the plaster. The most suitable plaster would be a gypsum-lime or gypsum plaster—also the unavoidable "Rotband." Properly plastering a ceiling is no easy task—perhaps you should leave this to a professional tradesperson. The old plaster must definitely be completely removed.
