I am considering replacing my Galant with the Nordby because the Galant is too wobbly. Every time you just slightly bump it, it shakes and the monitor wobbles like a lamb's tail. That is really annoying! Does anyone have experience using this table as a desk? How is it with wobbling?

Before buying something new: A table usually wobbles more if the height of the table legs is not adjusted correctly. Check that first. But I know the Galant table can wobble a bit just because of its frame. Why not try a proper desk designed specifically for office use?
It seems to be your work tool – I would rather invest an extra 50€ (about 55 USD) than keep tightening the table legs forever. And please don’t use a dining table as a desk. There’s a reason these pieces of furniture are different. With all those wood-colored finishes, scratches appear very quickly, and you won’t be happy – just moving your keyboard around can be enough to cause damage.
