Do you have positive or negative experiences with gypsum-cement plaster for interior use (living areas and wet rooms)? Please avoid wild guesses and speculation.

No offense intended.
I just find all the "I don’t know much about it, but ..." answers really frustrating.

Well, then off to the independent building physicist... of course, they don’t do it for free

I just find all those “I don’t really know much, but...” replies terrible.

And users who could provide useful information often find the conditions for responding frustrating.
Just let discussions happen naturally in a forum and pick out the helpful information.
That was a piece of advice meant to apply in general—I know our forum members and this forum well: such things do not work well here.

Let’s move on now!

The addition of calcium sulfate (gypsum) as a setting regulator delays the setting time from about ten minutes to around two hours. During this process, fine ettringite crystals form, which slow down the chemical water absorption/water binding. In contrast, sulfate-free cement sets immediately. However, the optimal mixing ratio between gypsum and cement should be determined at the factory. Creating your own mixtures is not recommended, as this usually leads to setting problems and a more or less unusable result.
