ᐅ Floor construction in a renovation project with a clay ceiling / wooden beam ceiling and underfloor heating

Hello everyone,
I am renovating an old, partially timber-framed house. As a young woman with little practical experience, I am grateful for any advice.

I have removed part of the clay ceilings to gain additional build-up height. The situation now looks like in the attached pictures, from above and below.



All the resulting holes have been patched. The structural requirements only allow for underfloor heating with a dry screed, so the build-up height should be kept as low as possible.
I was advised by friends to:

Level the floor with a leveling aggregate, install 25 mm (1 inch) OSB boards over it, add 8 mm (0.3 inch) impact sound insulation, then underfloor heating and dry screed, or alternatively use a 20 mm (0.8 inch) cement screed.

Do you think this is a good solution? Could I use thinner OSB boards to save a few millimeters? If I level the floor beforehand myself, could I also install the dry screed panels on my own?

This cross battens are still in place at the moment. Below them, there were more battens that have been removed. This has somewhat affected the stability, but I would still like to try it with thinner panels.
