We plan to start renovating our bathroom in two weeks, and since my brother is a trained gas and water installer, he will help us out a bit. He just asked me to get the materials in advance because he will be on vacation for 14 days. I have already purchased most of the materials, but now I want to get stainless steel threaded fittings. However, I noticed that stainless steel threaded fittings come in different sizes. Is there a way for me to figure out or measure which size I need myself?

simply measure the outside diameter of the pipe in millimeters. The specialist dealer will then be able to tell you the appropriate fittings in inch diameter and sell them to you. If there is no existing pipe to measure yet, tell the dealer the purpose of the pipe (washbasin connection, etc.).
