a question for the architects: We have already designed our house and have a building permit / planning permission. However, for the actual construction phase (i.e., finding/contracting the trades and construction supervision), we would like to hire a different architect or builder. Would a new architect agree to this? Is it possible to build a house that they did not design themselves?

It’s quite common to have phases 1-4 handled by an architect and then handed over to a general contractor. The contractor then takes care of the construction planning (included in the price), and phases 6-9 are either omitted or fall on the client.
