I have no practical skills or experience, and this pretty green bathroom.

At least I would like to unscrew this thing on the wall, but: what is it, and is there any reason not to?

That looks like it used to be a shower holder.

You can safely unscrew the screw without worry. No water will come out when you remove the part.

After that, you should ideally either install a new shower holder (universal ones are available starting from about 5 EUR) and/or at least seal the hole, for example with silicone.
