ᐅ House Construction Project! Masonry, Sound Insulation, Thermal Insulation?

We are currently in the planning phase of building and new to this field.
Most of you probably know how complex the path to owning a home can be. That’s exactly why we need your help and opinions!
The plot of land to be built on is near the airport, so good soundproofing is especially important. According to the city, the noise level from air traffic is between 55 - 60 dB (see attachment, orange zone).
Does anyone have experience with soundproofing and can offer good advice on what to focus on?
Which building materials (for walls and roof) are particularly recommended, and which should be avoided?
There are many different wall types:
1. Sand-lime brick + external thermal insulation composite system (ETICS)
2. Aerated concrete
3. Various porous clay bricks (T9-T7)
4. Lightweight expanded clay aggregate (LECA)
6. Liapor bricks
7. Jasto Z stone
8. Multi-layer wall construction as used in prefab houses
Many prefab home companies advertise new passive house standards and extremely good insulation and thermal values. However, we have read a lot about mold formation and algae problems, especially related to choosing a house without roof overhangs.
At what point does very high insulation cease to be cost-effective or even become problematic?
What U-value and sound insulation values should we aim for?
We have already sent inquiries to the following companies:
Grundhaus
HSE Massivhaus
Dennert Massivhaus
Jöckel Bau (Baumeister Group)
and two regional shell construction companies
Has anyone had experience with any of these companies or can recommend an alternative?
To give you a better idea, we have attached a floor plan and our architectural preferences.

Plot size: 570 square meters (6,135 square feet), 14.8 x 38 meters (49 x 125 feet)
Building envelope with 3 meters (10 feet) distance to neighbors is approximately 8.80 x 13 meters (29 x 43 feet)
