Herbs? All kinds, but they can freeze and die on you.
You can look up frost-hardy herbs, but even those need to be protected from severe frost in pots.
So, if you live near Bavaria, you can probably start buying some already,
but if you live in northern Germany, you’ll have to wait a little longer 🙂
