ᐅ Ridge beam incorrectly aligned or perfectly fine?

Hello everyone,

We are currently building with a contractor in the district of Fürstenfeldbruck and have had generally positive experiences so far. However, there is one issue that bothers us quite a bit because it looks odd visually, and we are unsure whether it is still within normal standards or not.

It is a townhouse, and the first issue is that the roof ridge is protruding (see attached photo). We would rather not accept this, but according to the site manager, everything is technically sealed and fine, and such minor visual issues are considered within the usual range and simply due to "hand craftsmanship." The photo was taken with our drone, and the protrusion is clearly visible even from a distance.

The second point concerns what we consider untidy work beneath the roof. Is this normal?

Does anyone have any idea how to assess this?
