ᐅ Which Material and Method to Use for Jointing Paving Stones?

Hello everyone,

We have been living in our newly built house for about 1.5 years now.
Around the house, there are several square meters of concrete paving stones (20x20cm (8x8 inches)) laid on gravel. At the time, the company filled the joints with regular sand. In some areas, the sand has since settled or washed away. In any case, the joints now need to be refilled or redone.
We are considering using a higher-quality material, preferably in white or light gray.

My question to you is: would quartz sand be a suitable option? Or is there a better alternative?
Additionally, I would need to remove the old sand-filled joints in some places... Would a pressure washer be appropriate for this, or is there a better method? Or does it even work at all with a pressure washer?

Sand does not grow. Sweep it in, water it, and let it harden. It apparently contains some cement, so it becomes a kind of sandstone when finished.
