So, when I imagine it the way you describe, the first thing that comes to mind is a complete renovation! 😉

In this case, you will need to find a craftsman who is experienced with these techniques. If you simply cover it up with gypsum plaster, it might no longer hold properly. You have to be careful with old building materials because they are often not compatible with modern materials. You can only repair them using the same type of material!
