For this, I plan to rent a mini excavator, but all the mini excavators I’ve found have a maximum digging depth of about 2 to 2.5 meters (6.5 to 8 feet).
What would be the best way to do this? Has anyone had experience with something like this?
Maybe there is a video I haven’t found yet, or some kind of guide?
I will need to dig a ramp or something similar to get in and out of the pit somehow!

This is most likely life-threatening. I would avoid doing that.
That doesn’t matter. Since the original poster is already asking such a question, they probably have no knowledge about shoring excavation pits. Shoring is required starting from a depth of 1.25 m (4.1 feet), and from this depth on there is a risk to life and limb.

I have rented the excavator for next week; I want to do this myself.....
I have already done so much myself, I will manage this too.........

Seriously though... 5m (16ft) depth calls for a professional company.
