Glossy tiles require more maintenance: you have to clean them more often, so please don’t forget that. Every little spot shows up immediately.
The color is a matter of personal taste. To me, gray would be too dull and “in-between” over time, but maybe that’s just personal preference. I would probably choose a shade 1–2 tones darker or lighter because that looks simpler, and I personally prefer simpler styles since they are more timeless—especially for tiles, which you can’t just replace as easily as laminate flooring.
Stairs: I probably wouldn’t choose beech; I’d go for maple or something white instead.

We have very similar tiles and oiled oak boards with white risers on a concrete staircase. It looks good.
