We are facing the difficult decision of which roof pitch to choose. The allowed range is 22 to 28 degrees. We want a single-family house with two full floors plus an open roof structure.
What are the advantages and disadvantages of a 22-degree versus a 28-degree roof pitch? Does a 28-degree roof pitch with an open roof structure make the hallway feel uncomfortable because of the height? (See attached pictures)

We are concerned that the ceiling height with a 28-degree pitch might feel too high and cause discomfort on the upper floor. On the other hand, we want to raise the bed in the children's rooms to create a kind of "loft," allowing more space in the small (11m² (118ft²)) bedrooms.
It is a standard square-shaped house with a gable roof.

You will need to decide: with an 11 sqm (118 sq ft) children's room, there should be some additional usable space for the child. I had such a roof pitch in my old terraced house, and I felt uncomfortable in the large bedroom. The smaller rooms at the neighbors’ were taller than they were wide, which was not pleasant. You might want to sketch this out for yourselves.
We now have an open roof in the living room with a 26-degree (26°) pitch, which feels very spacious and open.

One of the children's rooms is 11.89 square meters (128 square feet), and the second children's room is 12.39 square meters (133 square feet).
The depth (to the gable) is 3.04 meters (10 feet), and the length is 3.84 meters (13 feet) and 4.02 meters (13 feet 2 inches), respectively.
The highest point in the room is 3.60 meters (12 feet) at 23 degrees, and 4.00 meters (13 feet 1 inch) at 28 degrees.
In the children's room, we don’t really find this too bad, since we plan to cover the highest side with a wooden loft bed with a ladder.
However, in the hallway in the middle of the house, we are concerned it might feel like a large hall.

It depends on the layout of the rooms.
Approximate dimensions of our ceiling height: 2.80 or 3.20 meters (9.2 or 10.5 feet) width of the rooms, length 4.00 or 5.00 meters (13.1 or 16.4 feet). Windows were located on the short sides at the gable ends. Highest ceiling point was 3.40 meters (11.2 feet), with full floor height about 2.20 meters (7.2 feet).
They were really narrow, tube-like rooms; the windows at the end of the room (double patio doors) made this effect even more pronounced.
It sounds like you have a different room layout...
