If you have maple doors and frames and the floor is going to be tiled (wood look), should the flooring also be maple, or does it not matter? Or is it better to choose something completely different?

It depends on what you like 🙂
We wouldn’t say “that’s boring” just because the color is the same. We prefer a nice, expressive floor in a slightly larger format and a somewhat darker color (e.g., oak look) or even a limed version (available not only in real wood but also as tile).

Maple wood tends to darken slightly with a yellowish tint, which is why we chose a floor with a whitewashed look rather than maple doors. For this reason, I also don't find gray to be very suitable.
