quick question:
What do you think is a reasonable price per square meter for tile installation (labor including materials) excluding the tiles?
Our general contractor charges
for floor tiles in living areas (30 x 60 cm (12 x 24 inches)) 80 € / sqm (about 72 sqm (775 sq ft)),
for utility room/garage 50 € / sqm (about 65 sqm (700 sq ft)), and
for bathrooms 90 € / sqm (floor and wall area about 65 sqm (700 sq ft)). Without tiles!
Honestly, I find that quite steep. What’s your opinion?

You can remove the service and receive a credit. But then your general contractor will hold you responsible for the warranty on the bathroom waterproofing, as this is also done by the tiler.
Without the general contractor, the tiler provides no warranty. It's that simple.

At first, it seemed like a lot of money, but upon closer inspection, paying a few euros more would not have been unreasonable. A considerable amount of materials and several work steps are necessary. Applying tiles is only a small part.

Just checked, we paid €105 per m² (approximately $115 per sq ft) for our hallway. This included tiles and everything, with tiles that would normally cost around €45 per m² (about $49 per sq ft). The work was done by a very meticulous professional company that delivered excellent results, even though the hallway was anything but easy to tile (old building).
2018: With our general contractor, it was 65 euros per m² (about $70 per sq ft) plus tiles, but 60x30 cm (24x12 inches) tiles already had an additional charge. The 60x60 cm (24x24 inches) tiles in the bathroom alone cost around 78 euros per m² (about $83 per sq ft) just for the size. As mentioned, everything except the tiles was included (baseboard, silicone, adhesive, standard grout). Since we had the bathroom tiled only halfway up the wall (standard is full height), we even got a few euros back, which the painter then received for the fine plaster work that became necessary.
For the garage, you could do a DIY job yourself, even if it’s just a primer and concrete paint at first.
