Soon, my wife, daughter, and I plan to take the big step and start building a single-family house.
First, a quick update on our situation:
We are still at the very beginning and will first calculate what we can realistically afford. The post by Epi has already helped us a lot by providing some structure to the process.
We don’t have a plot of land yet; unfortunately, land is scarce in our preferred building area 🙁 Some of the developers mentioned below reportedly have plots there (although they are probably more expensive) 🙁
In any case, we plan to become members of the Bauherren-Schutzbund e.V. and have the construction accompanied by a “construction-related quality control” service.
We plan to build in Rhineland-Palatinate, district Südliche Weinstraße (SÜW). Now the question arises of whom to work with. For cost reasons, we prefer not to go solely through an architect. Our current idea is to work with a developer and have the construction-related quality control carried out to avoid unpleasant surprises.

Who says that working with an architect is more expensive than going through a developer?
You can save that money if you just do it directly with the architect 😉
