ᐅ Soundproofing for Drywall Partitions

Since I have an exposed roof structure, some rooms adjacent to/in the hallway above the normal ceiling height are currently unfinished or open.
I plan to extend the standard brick wall up to the roof ridge with drywall to close off the space and fully separate the rooms.
Using only a single drywall panel would be visually sufficient, but it is inadequate for sound insulation.
Especially since the bathroom/toilet is close to the living/dining area within hearing range, I don’t want bathroom noises to be heard in the other rooms, and vice versa, I don’t want disturbing noises from other rooms in the bathroom (for example, hearing the TV while bathing).
It shouldn’t be a problem to build a double drywall wall up to the roof ridge and fill the cavity with a material that insulates against sound.
I just don’t know what material would be suitable for that. I had even considered sticking those large egg cartons between the drywall layers 🙂

A fully brick wall up to the roof ridge is basically not an option or something I want to avoid as much as possible.

For clarity, I have two sketches—one from above and one from the side as if standing in front of one of the mentioned walls. In the top view, the red lines indicate where the area above the standard brick wall is currently open.
