I recently moved in, and during the viewing the apartment was still a construction site. Now a new kitchen unit has been purchased, which will be covered by the landlord. However, the water pipe has to be installed by myself. A major challenge now is sealing the water pipe, which is normally done using rubber rings. But water still drips out. Are there any adhesives, tapes, or materials that could help, if any?

If you bought cheap junk from the hardware store, you have to be very careful when tightening it. If you overtighten even once, it will leak because the thread gets scratched.
In our kitchen, the siphon pipes are also made of plastic, but with high-quality connectors... then it works even with just one rubber gasket.
The pipe doesn’t have to withstand high pressure.
What helps is hemp or flax treated with grease. That’s how plumbers seal metal threaded connections.
