we are planning to build a prefabricated house using timber frame construction. The interior walls are covered with drywall panels.
In the utility room, we are considering not finishing the walls by filling and wallpapering them, but rather leaving them as they are.
This room will house part of the heating system, the washing machine, and storage boxes.
Do you see any reason against this approach?

I can only agree: an unfinished room without plaster, even if it’s just the utility room, gives an incomplete and uncomfortable feeling.
Our site manager recommended painting the utility room before the screed is applied because it is more difficult after installing the appliances.
However, the painters are only booked for August. Since we are quite inexperienced with DIY (especially me), our site manager showed us how to fill joints with filler, and we plan to finish this weekend.
There are also many YouTube videos on the topic, and since the utility room doesn’t have to be perfect, I think this is a good solution.
