We want to organize some clutter in our attic and are looking for a simple and affordable shelving system. The attic has no knee wall and a roof slope of 27°. The shelf should be placed along the roof slope. Does anyone have an idea of something easy to buy off the shelf? Of course, the shelving doesn’t have to fit perfectly 🙂

That could be a good solution. I have the ones from Obi, they come with 5 identical shelves, and if you need a very wide shelf, you just put two of them side by side 😉
I still had some Ivar parts left over from my previous apartment, which I installed under the roof. I think I even trimmed a few centimeters (inches) at the back to fit the shelves further under the sloping roof. At low inclinations, every centimeter (inch) really makes a difference. In the garage, I have heavy-duty shelving from toom. They are good, but first, the structures for the boards are quite tall, which results in a significant loss of space. Also, to my knowledge, you cannot purchase additional tiers for them.
Not at the hardware store, but maybe from the manufacturer? Otherwise, people usually buy complete shelving units. One costs about as much as two shelves for IVAR (not even on sale).

I don’t have a solution for our attic yet either. Ideally, I want to make use of every centimeter, but I don’t have time to build it myself (there are plenty of tutorials for that).

I find the common solution of placing something taller in front and using the space behind for items you don’t need often quite annoying, because when you do need those things, accessing them is really inconvenient.
Maybe Kallax cubes in three different heights on casters could be a quick fix? (found on Pinterest)
